I'm not quite sure about the need for RAID, modern multi TB drives are pretty damn fast for mechanical drives. - Though I haven't really done any video editing.

My advice is to go do your own research - checkout the latest articles on anandtech and THG about the different components you're going to be buying.

Yes to those. IMO most fans will probably be fine if you get a fan controller, just make sure you set up your case for good airflow. Checkout http://www.silentpcreview.com/ if you want suggestions for case fans and stuff.
