THe wiki has detailed a lot of the episodes where info for ship specs can be obtained. Between going voer those and asking I think I can narrow down that list significantly.

Adding the episodes these things can be found in. * means I think it's in there but I don't know

Colonials first:
  • Heavy Craft:
    • Firing rate for Galactica's Heavy turrets (Season 2, Ressurection Ship part II, In the battle)*
    • Firing rate for Pegasus's heavy turrets (Season 3, Exodus Part II, When Pegasus comes to the resurection)
    • Firing Rate for Point Defense batteries (Miniseries, Part II )
    • Missile capacity for a Battlestar
    • Missile Ranges for a Battlestar
    • Missile Reload Rates for a Battlestar
    • Missile types for a Battlestar (Aside from Nuclear and Non-nuclear)
    • Turning Speed for Galactica (Miniseries, Part II)
    • Turning Speed for Pegasus
    • Speed for Galactica
    • Speed for Pegasus
  • Small craft
    • Speed for Viper
    • Speed for Raptor
    • Rocket payload for Vipers
    • Missile Payload for Raptors (With the proper equipment) (Season 3, Exodus part II, launching of drones.)* - Would require manual counting. There's also another place that shows them launching missiles, but I don't know where that was
  • Other
    • Scan ranges
    • Base types
    • Whether other types of Colonial ships exist
Now for the Cylons:
  • Heavy Craft:
    • Missile capacity for a Base Star
    • Missile Ranges for a Base Star
    • Missile Reload Rates for a Base Star
    • Missile types for a Base star
    • Turning Speed for Base Star
    • Speed for Base star
  • Small craft
    • Speed for Raider
    • Speed for Heavy Raider
    • Missile/Rocket payload for Raiders (It's 3, maybe 6, since they never fire more than 3. I think that they have one 'hold' in each wing)

Oh, and does anyone know what this ship is? It looks like the same type of design that the BAttlestars follow, which makes me think it's military of some sort

Pegasus Main Batteries: ~2 second intervals
Galactica Main Batteries: ~2 second intervals
Galactica Turning Rate: 18 degrees per second
Point Defense Turrets: ~4 round bursts at 1/4 second intervals (4 guns per battery) - Easily simplified as 1/16 second interval
Raptors - Dual KEWs on wingtips

Andon I thought that ship was Tom's prison ship? I'll find the episode with the prison ship to verify.
