Is there a quick and easy (or failing that a hard and gritty) way to capture screenshots without any GUI elements ?

Press F12, Spin. Gives you a perspetive view of your ship and the item you have targeted. Not aces (eg. you can still see chat and are confined to that which you are targeting and having your ugly ass ship right in front of it too) but still much better than a pic of how much hull you have.

I created a 'mini-mod' for Loriana to do that once. If you're adventurous enough, take
this file and overwrite the dialog.mdl in your /artwork directory with it (after making a backup first, duh).
Note that this was a five minute hack and -- to steal the line from FF3 -- this might void your warranty. I don't even remember what it looks like, but a quick glance at the file indicates that it really might not show anything GUIsh, also removing the chat.
Also note that you probably need to have CortUI installed. While it's not using any of it, it's still referencing those bitmaps and the Alleg client is probably loading them anyway.
