I love the fact that Allegiance allows for so much freedom and variety through different cores, but unfortunately, it seems to largely go to waste. I've played exactly one non-DM game on a non-DN core, and it was hardly representative (a 1v1 conquest on the Brawl map using the GoD4 core).
I'd love to see more cores get seriously played and developed. Especially ones that truly stretch what the game can do. I'm not terribly optimistic that it will happen, but I can dream, can't I?
So if I could develop cores, here's what I would do:
1. A "Freespace/Wing Commander" Core. The idea behind this is a core that mimics the basic elements of "traditional" space sim games. Physics would be toyed with, eliminating sidethrusters and lateral inertia. Capital ships would be slow, lumbering beasts, pretty much unscratchable by anything smaller than a bomber, and battles would focus around them at least as much as they focus around stations. Stations would be very difficult to construct and very tough to kill. Fighter-on-fighter dogfights would also be more traditional, with WW2-like dynamics.
2. A Newbie core. All of the basic elements of Allegiance would be there, but greatly simplified. For starters, there would be fewer factions, with simple and obvious differences. Probably just 3, maybe 4. Tech paths would be much, much simpler and more intuitive to a new player. For example, instead of "Expansion Complex" you would have "Interceptor Factory." The upgrade would be "Heavy Interceptor Factory." It would be cheaper to build, and get you nothing more than Interceptors and directly associated weapons/equipment. The idea is that a player could make a very good educated guess as to what he will get from building an item without having ever done it before.
Anyway, just wanted to get those off my chest. Before mercilessly ripping them apart and explaining why they are terrible ideas, please remember that they are, in fact, just dreams...and take that into consideration.
Core pipedreams
A lot of the other cores have SGs played on them occasionally. That said, you probably wouldn't find them significantly different from DN, with the exception of EOR, which the community as a whole apparently doesn't think is much fun.
I don't think you can play with the physics much just in core settings. You could do some pretty crazy things with the core, though. For instance, look at the Race Core.

A newtonian physics option for core devs is on the Bugzilla list, although it may take a while.
