Well wouldn't the price bump be due to regulation?

Beef is expected to be inspected, horsemeat exploited a loophole with lax inspection.

Meh..its all meat, though we don't really see AAA Horse meat for sale here at all.
Though we do slaughter horse in high numbers, it is usualy sent to the dog/cat food makers.
I imagine, some, may be headed for human consuption. Not positive though.

The OP does pose an interesting question though, that being, how do you trace your food from hoof, to plate..
A daunting task, for sure...
