560 isnt exactly a great card, its just an overclocked 460

Yeah, I'd rather not have to immediately upgrade my video card. I also don't need a 2TB HD, 1 is excessive enough.

The main advantage to running two lesser cards in place of a more powerful card is that they will often have the same or greater performance for less money. The advantage for a single more powerful card is that you can add a second down the line when prices drop.
